A bit of everything
The weekend went fast as always. Everyone was doing stuff everywhere else, exept for me - home as always.
So I decided to clean the fridge and use all the leftover veggies I had. I hate throwing good food out and do a lot of stews and soups with all the vegetables others probably throw out. On the other hand, I know that everything I throw out goes directly to our compost, where it eventually turns into good garden soil.
White cabbage, cauliflower, carrots, some spring onions, onions, red onions and potatoes. Even some half dead tomates found their way into the pot.
All nicely chopped and cooked on the stove for 5 hours with a good vegetable broth. Potatoes cut into small squares and cooked in a separate pot. Half of the ingredients taken out for later and the rest was blended into a smooth creamy soup. Remaining ingredients taken aside and the potatoes filled in - and voilá - a nice warming meal for the whole familiy.
They loved it!
