My boys and their friends love cup noodles. We did some testing on the various brands that are available in Denmark and found some that are both cheap and best in test, (done by some professional cooks).
Cup noodles are not a substitute for a proper meal, but a quick something after school before they hurry on to sport. So we don’t eat cup noodles every day, they are not that healthy.
In order to make them a bit healthier and only to use to one pack per person, I decided to pimp them with dried veggies and real meat. You can leave the meat out if you want to…
● Carrots, peeled halved and cut in very small pieces/ squares
● Broccoli, cut into the smallest bouquets
● Leek, cut into 2mm slices
● Spring onion, cut into 2 mm slices
● Minced meat, (or chicken) cooked
You can also use peas, corn and whatever you like in a broth.
When all ingredients are ready, cook them. Do it separately, in order to keep each ingredients own taste.
When cooked, put them into a dehydrator or on an oven plate (with baking paper), each ingredient in one layer. Again try to keep them separated as the leek and spring onion still can give their taste onto everything else. Remove the excess water with a piece of kitchen paper.
Oven or dehydrator must be on 70°C. Turn the ingredients carefully every 20 min. in order to dry them all over. The whole drying process takes about 2 hours. Make sure everything is completely dried out.
When finished put everything in a jar with a lid that closes tightly. It can then be kept for a few weeks in a dry, not to warm cupboard before it begins to lose flavour.
When making cup noodles, pour two table spoons of the veggie mixture into the bowl. Add noodles and flavours as usual, add boiling water. Stir a few times and after 3 min. it’s ready to eat.
Please be aware it is very hot, don’t let small children do this on their own to avoid scolding!
