Nature is full of free gifts, even in winter. One of the gifts are oak buds for infused aquavit. The buds can be harvested all winter until March when the sap begins to run. Pick around 100 buds, do not take more than a few from each tree and not the ones at the end of a branch. Pick from the middle or from the twigs. Where I gather, there are around 150-200 trees, so no unnecessary harm is done to any of the trees. I also gather for one bottle only.
Once you are done, pour the buds into a bottle of clear aquavit or vodka. Put the bottle into the fridge and leave it for 8-9 months and it will be ready for harvest feasts or Christmas. Filter the buds from the aquavit and you’re ready to enjoy a mild wood tasting snaps.
